My friend Gina tries to avoid processed sugar. She has found that it pulls her immune system down, and she is much healthier if she restricts her sweeteners to honey, agave, maple syrup, and the like.
Gina also likes chocolate, but she found she can still have her chocolate fix by making granola sweetened with honey and flavored with 100% cocoa.
But her birthday was last week, and I wanted to make her a cake. I had come across a recipe for Chocolate Beet Cake on Pinterest, and I thought I’d try it.
It was marvelous, and even those who don’t care a fig about processed sugars really enjoyed it. Stephan said I must make it again sometime. It was rich, not overly sweet, moist, and earthy.
Here is the recipe. The only changes I made were that I greased the pan with shortening instead of butter, and I used beets that I had canned last summer instead of getting raw beets and then cooking them.
If you like rich chocolate cake, make this one, whether you like beets or not, and whether you avoid processed sugar or not. It is yummy.
